starting from scratch "Intouch vs S7 PLC"..

Hello Everyone,

I have two applications.HMI is Intouch v9.0 and PLC is S7-400..I want to learn to add a new tag in HMI (Emergency Stop) and link that tag with the PLC address (M100.0)...I don't want to do copy the existing tag and to change its data instead I want to start from scratch...

Please advise me how to proceed...any manuals??
