You will have to use and OPC Cleint that is designed to log data or you can write you own andlog it that way.
A good off the shelp solution is OPC DataHub.

MatrikonOPC Client for ODBC does the trick for you:

You will be able to fetch data from your OPC Server into the database.

Here is another option but I think you will need both KepServer and DataLogger from Kepware.
