taking average sample on a logic5000

Does anybody know the best way to take an average sample that takes only .7 of a second? I am trying to trend the vacuum reading average of a rapid pack at the sealing head. I am only trying to get the max torrs only when it is evacuating, then freeze that reading and record it on every cycle. A ladder logic sample would be great. Thank you kindly in advance for any help you might have.
