Siemens Part Numbers

So, how do I check this in Step7?
Will I find it in the configuration . . . or am I going to have to look in the
function blocks or some other strange, weird, and wonderful place?

Just the hardware configuration in the properties of the module.

The High-Feature and Standard modules use the same amount of I/O area.

It does look like the Input addressing scheme (and numbers) are the
same for all three machines.

The 0AA0 type input modules do not have the 'Parameters' tab that
the 0AB0 input modules do.

Which leaves me with the output modules and

Am I right in thinking that it should be a matter of changing the module,
then changing the part in the configuration (making sure the addresses
are the same as the old one)?

Yes.

Side note: you don't have to change the part number of 6ES7132-4BD01-0AA0 to 6ES7132-4BD02-0AA0... in this case, the new will behave as the old one without modifying the HW config because it is a direct replacement.

Yes.
Right click on the module and you should have an option to replace the part with another.
