Currently using a low cost NUC for an hmi.
Looking for a low cost NUC or similar.

Do you mean Intel NUC small factor computer?
Do you need Windows?

You could possibly use Raspberry Pi with Node RED or AdvancedHMI as HMI depending on your need and specifications...
