I have a s7-1200 plc, my question is this, will the older version of Siemens software, step 7 even run on this processor? And if it will, is there a version 14 of that software? Thanks!

You will need the TIA Portal Basic software for this CPU
The current version is V16, depending of which CPU version you have, you might be able to use an older version of the TIA Portal
