Bottle Logic: how to

Hello people,

Just new to the field am currently taking a PLC course. I'm having difficulty in understanding how bottle logic and Latch/unlatch instructions work for a ladder logic program. Anywhere I can read up on this. (i.e. there a PLC's for dummies yet?)
