We have a customer who wants us to produce drawings as per UL/CSA norms. Should I use JIC or IEC symbols?

JIC is more likely what they are looking for, and standards show diagrams more or less conforming to JIC drawings. However, nothing in either UL or CSA, as far as I know, dictates drafting standards.
