Find a better class of customer.

Get paid in advance.

Consider the damage to your reputation if you fail to remove your 'protection' after the customer pays for your project.

I don't know anything about the legal situation in your country, but there could be consequences if your scheme shuts down a process or if someone gets hurt as a result of it causing the operator to lose control.
