There is any add on instructions for converting level (flow head) to flow in open channel flow measurement

Look into "Manning's Equation". It's a straight forward equation you easily implement. The hard part is finding n (roughness coefficient) for your channel.

Your best bet is a wier or Parshall Flume with level measurement. There are also instruments that sit in the bottom of the channel or sewer and measure both depth and velocity.
