What software are you using or would recommend for drawing interlock, control and sequence diagrams?

A full blown CAD feels over the top to me. I've seen some people use Visio.

Is there some alternatives, not too advanced softwares but with ability to create your own library of symbols?
 
I've used Visio for flowcharts and had a colleague designing an interlock sheet in Excel (which was poor).

To be honest, I find that interlock conditions are better represented as a list of text rather than a graphical display.

Have been playing around with LibreOffice Draw and it seems to have most of the stuff I want and was an easy start as well!
