I have VersaView 1000H which will interface with a single SLC5/05. Would the machine edition be suitable for developing projects in this instance?

That's a "VersaView CE 1000H", very similar to a PanelView Plus except you can access the Windows CE desktop.

You need FactoryTalk View Studio Machine Edition.

The full FactoryTalk View Studio Enterprise Edition will program both Site Edition (SE) and Machine Edition (ME) projects, but is not necessary for ME-only design.

Be sure to get the newest firmware update for your VersaView CE 1000H terminal. In my opinion, don't use anything earlier than 4.009.
